Mexican Independence Day in East Los Angeles
Every September, the historic East Los Angeles Mexican Independence Day Parade moves along Cesar E Chavez Avenue. To celebrate, El Gallo Bakery handcrafts our signature Fiestas Patrias Tricolor Conchas.
Artisan Flag Stripes
Each concha features three hand-applied sugar paste ribbons representing the Mexican national flag: emerald green (hope and independence), pure white (unity and purity), and vibrant red (the blood of national heroes). Underneath lies our signature soft brioche-style sweet dough.
Community & School Orders
